Shalini Lal

Shalini is an entrepreneur running her food truck “Kart-O-Tize” in Bangalore. She has been a foodie since childhood and would often be found experimenting with food which was wholly encouraged by her father. In her work tenure, she’s handled the printing press of her father and also been a multimedia teacher, an MBA lecturer at a college and an HR Manager. Shalini’s also been a part of the women’s startup program at the prestigious IIM Bangalore and that’s where she named her current food truck. A resident of lucknow and a single parent to two sons, Shalini laughs it out about the menu of her truck which is a lot of fusion items. A passionate driver herself, she plans to take the truck across pan India very soon!

Lucknowi Veg Kebab:

Lucknowi Veg Kabab

Preperation time - 1/2 hr
Pre preperation - soaking time
Ingredients -
Chana dal - 1cup
Masoor dal - 1cup
Soya granules - 3/4 cup (soaked)
Onions - 2 medium size
Garlic - 10-12 cloves
Ginger - 1 inch
Green chillies - 2
Coriander powder - 3 tea spoon
Chilly powder - to taste
Garam masala - 1 teaspoon
Salt - to taste
Oil for shallow frying

1. Soak chana dal and masoor dal overnight and boil it with salt to taste.
2. Mash the two dals and mix all the mentioned ingredients to get a batter ready to roll into kababs.
3. Make small patties from the ready batter and shallow fry on tawa or bake it in OTG for oil free cooking.
4. Serve hot with lacha paratha green chutney and sliced onions.
